Our heat and serve Enchilada Mole is a classic “coloradito” sauce, crafted with authentic ingredients like heirloom corn, smoked chiles, tomatoes, seeds, and spices. This slightly-sweet sauce is more subtle than Mole Negro and less spicy than Mole Rojo. It's a crowd pleaser and can be used to make no-bake Oaxacan enmoladas—enchiladas made with mole—by lightly frying corn tortillas, folding them around shredded chicken or cheese, and generously coating them in warm mole. It’s also delicious over grilled pork, tofu, or hearty vegetables like sweet potatoes and squash.
